Best Blueberry Muffins

These blueberry muffins made Sunday morning even sweeter.







Light and sweet, these muffins don't have the tough, mealy texture of some muffins.  They're more like a fluffy cake.





Here's how to make them!

Ingredients:

1/2 cup butter, softened
1 cup white sugar
1/3 cup light brown sugar
3 medium eggs
1 tablespoon vanilla
1/4 teaspoon salt
1/2 cup milk
2 teaspoons baking powder
2 cups all-purpose flour
2 cups fresh blueberries

For topping:
1 1/2 teaspoon white sugar
1/4 teaspoon nutmeg
1/4 teaspoon cinammon


Beat white and brown sugar into butter until creamy.  Add eggs one at a time (beat after each, just until incorporated).  Mix in baking powder, vanilla, and salt.  Add in half of flour and milk, and beat on low just until incorporated.  Repeat with the other half of milk and flour.  With a wooden spoon, fold in blueberries and mix well into batter.
Spoon mixture into muffin pan.  Combine topping ingredients, and sprinkle onto muffins.  Bake for 20-25 minutes at 375 (for 12 large muffins). 



Easy and absolutely wonderful.
